Gran’s Meatloaf

Servings 4-6

Ingredients

500g beef mince
500g pork mince
100g fresh breadcrumbs
1 large onion, finely chopped and cooked until very soft in a pan over low heat
½ bunch parsley, finely chopped
6 tbsp tomato sauce
1 tbsp hot English mustard
3 tbsp Worcestershire sauce
1 1/2 tbsp brandy
80ml milk
Salt and pepper
6 bay leaves

A classic hearty dish, Gran's Meatloaf!

Method

Preheat the oven to 160C. Grease a loaf tin and line with baking paper, ensuring there is enough to run off the sides. In a large bowl, mix all of the ingredients together and ensure they are well combined. Place the meat mixture into the loaf tin and garnish with the bay leaves. Drizzle olive oil on leaves. Place the loaf tin in a larger baking dish with high sides and fill 1/2 of the way up with water. Bake in the oven for 1 hour 15 mins. Remove from the oven and rest in the loaf tin for 20 minutes before serving. This can be served hot or cold or in a salad. I love to serve it with chutney or relish.
