Gluten-Free Nuggets

Ingredients

1kg chicken mince

½ cup almond meal

1½ tsp dried oregano

1 tsp sugar 

Pinch of salt

2 eggs, whisked

Olive oil spray 

Coating 

1 tsp onion powder 

½ tsp garlic powder

Pinch of Chinese five spice

¾ cup rice flour 

¼ cup potato flour 

½ cup tapioca flour 

Method

Combine the coating ingredients in a large bowl with a pinch of salt.

In another bowl, combine the chicken mince with almond meal, dried oregano, sugar and a good pinch of salt. Using a tablespoon measure, make round meatballs and flatten slightly. 

Dip the chicken into the egg wash and then the coating mixture. Place on a flat tray and then lightly spray with oil.

Arrange nuggets in one single layer in the basket of the air fryer and cook for 7 - 15 minutes at 200°C.
