Glazed Salmon Fillets

Ingredients

1 tbsp vegetable oil
4 salmon fillets skin on, about 250g each
2 tsp brown sugar
Pinch salt
½ tsp cornflour

Glaze
1 knob ginger, finely grated
2 tbsp brown sugar
2 tbsp soy sauce
2 tbsp mirin
1 tbsp cider vinegar
1 tbsp water
1 tsp cornflour

Spring onions, finely sliced

Method

Pre heat the oven to 160C.

For the glaze, combine all the ingredients in a small saucepan and bring to the boil. Turn the heat down and simmer for 1-2 minutes to thicken.

Combine the sugar, salt and cornflour in a bowl. Pat the salmon dry and lightly sprinkle the flesh side with the mixture. Press the sugar rub into the fish so it sticks.

Heat a large non-stick, ovenproof pan with oil. Place the fillets, flesh side down into the pan and cook for 1 -2 minutes or until brown. Turn the fish over onto the skin side, take off the heat and spoon glaze evenly over the fish. Place the pan in the oven and bake for 6-8 minutes.

Remove from oven, garnish with spring onions and serve with rice or noodles.
