French Onion Soup

Servings 4

Ingredients

2 tbs. olive oil
50g butter
1.5 kg brown onions, finely sliced
4 sprigs of thyme
1 tbs. flour plain flour
1 L chicken or beef
3 tbs. Madeira
Salt and pepper

4 pieces of sourdough
Pinch nutmeg
4 tsp. Dijon mustard
250g Gruyere, freshly grated

Method

Heat oil and butter in a large pot and add the onions. Coat well with the butter and oil and add the thyme and season generously with salt. Cook on a very low heat for 45 minutes. Stir regularly so the onions do not get much colour. Once the onions are very soft add the flour and cook for further 3-4 minutes. Now add the Madeira and stock and cook for a further 35 minutes.

Once the soup is cooked prepare the toast. Pre-heat a grill. Butter the bread with the Dijon mustard and sprinkle over the cheese. Freshly grate nutmeg over the cheese and grill until golden and well melted.

Serve the soup in bowls and place the cheesy toast on the side.
