Daigaku Imo - Candied Sweet Potatoes

Ingredients

1 sweet potato (200g), peeled and cut into cubes

2 tbsp honey

1 tsp soy sauce

1 tsp toasted black sesame seeds

2 cups vegetable oil

Method

Mix the honey, toasted black sesame seeds, and soy sauce together in the bottom of a mixing bowl. Place the vegetable oil in a small saucepan and heat to 180C. Gently fry the potatoes for 3-4 minutes until just soft. Drain the potatoes well on a paper towel. Place the potatoes in the mixing bowl with the honey, toasted black sesame seeds, and soy sauce and mix gently until all the potatoes have been coated evenly.

Serve immediately.
