Cream of Lentil Soup

Cook Time 45 minutes

Ingredients

1 leek, chopped

2 stalks of celery, outer skin peeled and quartered

1 carrot, quartered

1 large flat mushroom, chopped

150g Puy lentils

2L vegetable stock or water

200ml crème Fraiche

Salt & pepper

Chervil, to serve

Olive oil, to serve

Crouton, to serve

Method

Place the vegetable into your multicooker which has been fitted with a blade. Add the leek, celery, carrot and mushroom along with the lentils and vegetable stock. Launch P1 soup program and cook at 100°C for 40 minutes (alternatively, cook in a pot for 40-50 minutes until lentils are tender).

Once cooked add 3/4 of the crème fraiche, a good pinch of salt and pepper and mix at a speed of 6 for 1 minute then increase the speed to 12 for a further 30 seconds for a smoother result.

Serve garnished with an extra dollop of creme fraiche, chervil, croutons, olive oil and extra pepper.
