Ingredients

150g plain flour
50g brown sugar
115g unsalted butter
2 tsp. ground cinnamon
1 egg yolk
Salt

Method

Place all ingredients except the egg yolk into a food processor and blend until a fine crumb forms. Now add the yolk and blend until it comes together. Remove and bring the dough together with the warmth of your hands like pastry.

Wrap in cling film and chill in the fridge for at least 1 hour.

Preheat the over at 200°C and grease and line a large baking tray with baking paper.

Roll out the dough until it is 1 cm thick and cut dough into desired shapes with a 6.5 cm cookie cutter. Bake for 10 minutes or until golden brown. Cool completely before removing them from the tray.
