Chinese Style Braised Noodles with Pork Belly and Snake Beans

Ingredients

1 tbsp vegetable oil

200g pork belly, thinly sliced

2 tbsp soya + 2 tbsp soya

200g tomato, roughly chopped in chunks

4 cloves of garlic, thinly sliced

150g snake beans cut into 2cm pieces

750ml water

1.5tsp caster sugar

2 tbs dark soy

250g Chinese skinny noodles

Chinese Style Braised Noodles with Pork Belly and Snake Beans

Method

Heat wok over high heat and add the oil. Sear the pork until golden brown. Add 2 tablespoons of light soy and bring to boil before adding the tomato pieces and garlic. Cook until they start to collapse. Add the beans and cook for a further 5 minutes before adding the water (it should just cover the mixture).

Add the remaining light soy, dark soy and sugar to taste. Put a lid on and cook for 2 minutes. Add the noodles and cook for a further 5 minutes so the noodles absorb all the liquid. Remove the lid for the final 2 minutes to ensure most of the liquid has gone.
