Chimichurri

Ingredients

1 clove garlic, minced on a fine grater

1 salad onion, finely chopped (white bulb with spring-like green tops)

½ bunch parsley, finely chopped

1 tsp dried oregano

1 long red chilli, finely chopped

2 tbsp red wine vinegar

⅓ cup extra virgin olive oil

Salt

Method

Combine all the ingredients together. Season to taste.

Serve with grilled meat or fish like salmon.
