Chicken Noodle Soup

Ingredients

1 small whole chicken
3L chicken stock + water
2 carrots, peeled
3 stalks of celery
1 leek
1 onion, cut into 4
½ head garlic
¼ bunch thyme
1 bay leaf
6 peppercorns
3 nests of vermicelli

Justine makes her classic Chicken Noodle Soup.

Method

In a large stockpot add the whole chicken, chicken stock and enough water to cover the meat. Bring to the boil and skim off all of the impurities. Reduce the heat to a simmer and add the vegetables, onions, herbs and pepper. Place the lid on and simmer very gently for 1 and 1/2 hours.

Carefully remove the meat and vegetables from the stockpot. Allow to cool a little, then roughly chop the vegetables. Remove the meat from the bones.

Bring the soup to the boil, along with the pasta. Add the veggies. Simmer for five minutes. Add the shredded chicken back to the pot and stir.

Serve!
