Cheat's Tortellini of Ricotta and Lemon with Grilled Calamari

Servings 4-6 as an entree

Ingredients

1 packet of square wonton wrappers

300g ricotta cheese
Zest and juice of 1 lemon
A small handful of pinenuts, toasted and chopped
2 tbs. parmesan, finely grated
1 handful of parsley, finely chopped
1 egg yolk
Salt and pepper

300g squid, cleaned, scored and tentacles reserved
Extra virgin olive oil
2 clove of garlic, finely chopped
1 tsp. chilli flakes
Zest of 1 lemon
Purple basil
1 punnet of mixed coloured small heirloom tomatoes

Method

To make the filling, mix ricotta, lemon, pinenuts, parmesan, parsley and an egg yolk. Season the mixture with salt and pepper.

Fill the wontons with one tsp. of the filling. Now fold in half to form a triangle and, with your hands cupped, ensure you remove all the air from the pocket. With the straight edge facing you twist once towards the pointed corner. Now bring the two flaps into the centre and squeeze to attach. Continue the process.

Once ready to cook the tortellini, boil a large pot of salted water and cook for 3-4 minutes.

For the squid, chop the scored squid into rough squares. Marinate briefly in the olive oil, garlic, chilli flakes and lemon zest. Season.

Heat a large non-stick frying pan on medium to high heat and flash fry the calamari pieces for 1-2 minutes, ensuring you do not over fill the pan. Now add the tomatoes and sauté briefly.

To serve, portion just-cooked tortellini into bowls, scatter with a few pieces of the calamari and tomato mixture and basil.
