Chargrilled Minute Steaks with Tomato & Basil Sauce

Ingredients

2 x 150g minute steaks
Salt and pepper
¼ cup extra virgin olive oil
¾ punnet of cherry tomatoes, halved
½ cup kalamata olives, stone removed
2 clove garlic, very finely sliced
½ red chilli, seeds removed finely chopped
½ cup basil, leaves torn
1 tsp lemon juice

Method

For the sauce, add olive oil (reserve 1 tablespoon for the steaks) to a medium saucepan. Heat over a very low heat until just warm. Now add the tomatoes, olives, garlic and chilli and season with salt. Cook over the gently heat for 5 minutes or until the tomatoes just start to blister. Remove from the heat and cool for 5 minutes before adding the basil and lemon juice.

Season the steak with salt and pepper and drizzle with a little of the remaining oil. Heat a grill pan over a high heat and cook steaks for 1 minute on each side. Rest for one minute before and serving a heaped tablespoon of the sauce.
