Carrot, Apple and Beetroot with Chia

Ingredients

1 tablespoon Black Chia seeds
3/4 cup of pure coconut water
2-3 medium (280g) carrots, cut into quarters
2 medium (300g) green apples or Jazz apples, cut into pieces
1 small (100g) beetroot, scrubbed and cut into pieces

Carrot, Apple and Beetroot with Chia

Method
  1. Combine chia seeds and coconut water in a sealable container and shake well.  Allow to sit for 15 minutes.
  2. Place carrots, apples and beetroot through juicer.
  3. Stir juice and pour into glasses leaving a 3cm rim at the top of the glasses.  Shake Chia mixture and pour over juice.
  4. Serve immediately with a straw.
