Beef Asada Tacos

Ingredients

4 x 200g sirloins

12 flour or corn street tacos

Salt and pepper

Herb Salsa

½ bunch each of coriander, mint and parsley, finely chopped

1 salad onion, finely chopped (white bulb with spring onion-like green tops)

1 long red chilli, finely chopped

A few drops of Tabasco

1 clove garlic, minced on a fine grater

1 tsp dried oregano

Juice of 1 lime

1 tbsp red wine vinegar

⅓ cup extra virgin olive oil plus extra for steak

Method

Remove the steak from the fridge 1 hour before cooking.

For the herb salsa combine all the ingredients together.

Preheat the BBQ or grill pan to medium-high heat. Oil steak lightly and season with salt. Grill the steak for 2 - 3 minutes or to your liking and rest for a few minutes while you warm the tacos.

Warm tacos for less than a minute on each side on the BBQ or pan and keep warm in a clean tea towel.

For serving, spread salsa onto the tacos, thinly slice the steak, and arrange it on top. Drizzle additional salsa over the top and serve straight away.
