Apple Crepes

Cook Time 45 minutes

Servings make 6 crepes

Ingredients

200g plain flour

2 tbsp of caster sugar plus an extra 2 tbsp

3 eggs

400ml full cream milk

20g butter, plus extra for greasing

3 golden delicious apples (or Granny Smith) peeled and thinly sliced

2 tbsp calvados (apple brandy)

Pinch of salt

Icing sugar, to serve (optional)

Method

Add the flour, salt and 2 tablespoons of sugar to a large bowl and make a well in the centre. Break the eggs into the well and whisk. Now add the milk and whisk in until a smooth batter is formed. Rest batter in the fridge until ready to use.

In a large frying pan, melt the butter and add the apple slices along with the remaining sugar. Fry off for a few minutes then deglaze with calvados.

Brush a little bit of the butter in a crepe pan then scatter over a few apple slices. Pour in a ladleful of crepe batter and swirl around the pan. Once set and golden, flip and cook for a further minute. Gently roll up the crepes, dust with icing sugar and serve warm.
