Zucchini and Whitebait Frittelle

Ingredients

500g whitebait or silver fish
10 zucchini flowers, torn into small pieces
2 eggs, beaten
100g plain flour
100ml sparkling mineral water
½ teaspoon cayenne pepper
2 tablespoons chopped flat-leaf parsley
2 litres Alfa One rice bran oil
sea salt and freshly ground black pepper

Method

Mix all of the ingredients except the oil in a large bowl and allow to stand for 20 minutes.

In a deep frying pan (or a wok), bring the oil up to a high heat. Carefully spoon in the mixture using a large spoon. Fry the frittelle until golden brown, then remove and drain on paper towel.

Sprinkle with salt and pepper.
