Zucchini and Ham Gratin

Ingredients

6 medium-large zucchini, trimmed and cut into thirds

100g slices of leg ham

90g gruyere cheese, coarsely grated

For the Béchamel sauce

20g butter, plus extra for greasing

20g plain flour

350ml milk

Salt & pepper

Method

Preheat the oven grill to hot. Grease a baking dish large enough to fit the zucchini comfortably.

Place a steamer basket over a saucepan of simmering water. Add the zucchini, cover and steam for 3-4 minutes until just tender.

For the béchamel, melt the butter in a saucepan over medium heat. Add the flour and stir continually with a wooden spoon for 2–3 minutes to make a roux. Remove from the heat, pour in a quarter of the milk and vigorously whisk to prevent lumps. Place the pan back on the heat and add the rest of the milk, whisking until the sauce comes to the boil and thickens. Season with salt and pepper.

Place the zucchini in the prepared baking dish and nestle the ham in and around the zucchinis. Pour over béchamel sauce and sprinkle the cheese all over. Place on the centre rack in the oven and bake until bubbly and golden.
