Winter Fruit Salad

Cook Time 15 minutes

Servings 4

Ingredients

75g caster (superfine) sugar

Pinch of chilli flakes

1 tbsp coconut vinegar

1 tbsp Gin (optional)

50ml water

30g ginger peeled and finely chopped

Zest and juice of 1 lime

4 gold kiwi fruit, peeled and cut into 8 wedges

½ ripe papaya or paw paw, peeled, seeded and diced

200g coconut yoghurt

1 bunch mint, picked

Method

In a small pot, bring to the boil the sugar, chilli flakes, vinegar, Gin if using, water and ginger.

Stir in the lime juice and zest, take off the heat and chill. 

Put the kiwi fruit and papaya in a mixing bowl, pour the chilli syrup over and let sit for 5 minutes.

Place in serving bowls and add coconut yoghurt and mint.
