White Chocolate Rocky Road

1½ cups pink marshmallows, quartered
1 cup pistachio nuts, chopped
¾ cup chopped pink Turkish delight
450g white chocolate
80g butter

Combine 1/3 each of the marshmallows, nuts and Turkish delight and set aside.

Melt together the chocolate and butter in a bowl over simmering water, making sure the bowl doesn’t touch the water.

Combine the chocolate mixture with the remaining marshmallows, nuts and Turkish delight. Spoon mixture into a lined 28cm x 18cm slice pan. Gently press the reserved marshmallow mix into the top of the slice. Allow to firm, then cut into squares and store in an airtight container until required.
