West Fried Chicken Burger

Cook Time 20 minutes + soak time

Ingredients

200g chicken breast, tenderised (2 pieces of chicken breast)

1 cup buttermilk

2 slices of bacon

2 slices of provolone cheese

2 tbsp chipotle mayo

4 leaves of green oak lettuce

200g of fat chips

1 tbsp chicken salt

2 burger buns, toasted

Vegetable oil for frying

Spicy fried flour

2 cups plain flour

1 cup corn flour

1 tbsp table salt, or to taste

1 tbsp onion powder

1 tbsp garlic powder

2 tbsp dried oregano

1 tbsp paprika

1 tsp white pepper

½ tsp cayenne pepper

Method

Spicy fried flour
Mix all ingredients together and store them in an airtight container.

Chicken Burger
Soak the chicken in buttermilk for a minimum of 3 hours.

Place the chicken into the spicy flour and coat well. Use your palm to flatten out the chicken and press flour onto the chicken. Fry the chicken in 160°C oil for 5 minutes.

Fry 1 portion of chips. Grill the bacon on the grill or flat plate. Toast the buns and once toasted spread chipotle over the top and bottom of the base. Lay lettuce over the base of the buns, place cheese on top, followed by chicken and bacon. Place the lid of the buns on top and serve with chips on the side.
