Warm Pork Satay Noodle Salad

Ingredients

Sauce

½ cup crunchy peanut butter 
½ cup water 
1 tbsp fish sauce
1 tbsp light soy sauce 
½ tsp finely grated lemongrass
1 garlic clove, finely grated
Juice of 1 lime + extra to serve

400g pork fillet, fat trimmed
1 tbsp peanut oil 
250g Fantastic fresh thin Hokkien noodles
½ small red onion, thinly sliced
1 Lebanese cucumber, thinly sliced
½-1 cup snow peas
4 radishes, thinly sliced
½-1 cup grape tomatoes, halved
Handful of fresh coriander leaves
Toasted peanuts, roughly chopped
Sliced red chilli (optional)

Method

For the sauce, combine all the ingredients into a small pot over a medium heat and whisk together until it gently simmers and combines. Keep warm.

Thinly slice pork and drizzle over oil, season with salt and rub to coat. Heat a large non-stick frying pan or grill over medium-high heat and cook pork until brown and cooked through. Set aside on a plate for 5 minutes to rest. 

Prepare noodles following packet directions. Drain. 

Mix noodles, onion, cucumber, snow peas, radishes, tomatoes and pork in a large bowl. Toss satay sauce through salad and sprinkle with coriander and peanuts.
