Warm German Sausage and Potato Salad

Ingredients

8 Kipfler potatoes (or any other good waxy potato)
Variety of good quality German sausages (bockworst, knackwurst and/or bratwurst)
1 tbs Dijon mustard
1 tbs red wine vinegar
4 tbs Olive oil
2 French shallots, finely sliced
½ bunch flat leaf parsley, finely chopped
½ bunch Chives, chopped
Salt and pepper

Method

To make the vinaigrette, mix mustard, vinegar, salt and pepper. Slowly add the oil and mix to combine. Add the French shallots.

Wash the potatoes well to get rid of any dirt. Place in a large pot of cold water with a good pinch of salt and bring to the boil. Cook for 15 to 20 minutes or until completely cooked. Strain and allow to cool slightly before peeling.

In another large pot of simmer water, place the German sausages in to cook.

Slice the cooked sausage into 4 cm rounds and place to a large salad bowl. Cut the potatoes into the same size rounds as the sausages and place in the bowl. Add the parsley and chives and finish by dressing the salad with the vinaigrette. Adjust seasoning if necessary.
