Warm Chorizo and Squid Salad

Ingredients

2 x chorizo sausages, sliced

200g cleaned squid cut into rings (or any seafood of your choice)

1 small garlic clove, minced

¼ tsp dried chilli flakes

½ x (400g) can chickpeas, drained & rinsed

1 ripe tomato, roughly chopped

½ bunch parsley, leaves roughly chopped

½ lemon juice and zest

1 tbsp extra virgin olive oil

Salt & pepper, to taste

Crusty toasted sourdough to serve

Method

In a cold fry pan, add sliced chorizo and turn the heat up to medium-high to render fat and caramelise on both sides.

Once chorizo is crispy and the pan is hot, add in olive oil and prepared squid. Saute until the squid is just cooked and remove from heat.

In a mixing bowl add chickpeas, tomatoes, parsley, minced garlic and a pinch of chilli and season. Then add in warm chorizo and squid plus any oils or fats from the pan. Toss salad and serve warm with a piece of crusty sourdough bread.
