Vegan Rice Pudding

Ingredients

½ cup arborio rice

750ml almond milk

2 tbsp almond butter

2 tbsp of maple syrup, or to taste

1 cinnamon stick

Toasted almonds, chopped

Red berries, to serve

Method

Pour almond milk into a pot with the rice and a cinnamon stick. Bring to a boil and reduce the heat to a simmer for 20 - 25 minutes, stirring continuously until the rice is cooked and the pudding thickens.

Remove the cinnamon stick and turn the heat off. Stir in the maple syrup and almond butter.

Serve with berries and toasted almonds.
