Vanilla and Banana Pikelets

Ingredients

1 tsp macadamia or vegetable oil

2 small bananas, plus extra for serving

1 tsp vanilla extract 

1 cup of self-raising flour 

2 eggs 

Dollop cream, to serve 

Maple syrup, to serve

Method

Mash the bananas with a fork in a large bowl, add the vanilla extract and sift in the flour. Whisk the eggs and then pour in. Using a spatula slowly fold everything together to form a batter. Being light handed will ensure fluffy pancakes.

Heat a non-stick pan over a medium heat and add a little oil. Place a few tablespoons of the mixture into the pan and cook for a minute until the bubbles that rise to the surface pop. Flip and cook for a further minute.

Serve with extra banana slices, a dollop of cream and lashing of maple syrup.
