Ultimate Brunch Cook-Up

Ingredients

4 eggs

4 rashers of bacon
4 thin pork breakfast sausages, casings removed
40g haloumi, coarsely grated  
4-8 Swiss brown mushrooms, stems removed
2 English muffins
2 tomatoes, cut in half
HP sauce to serve 

Method

Preheat a Tefal PowerGrill or BBQ to high.

Place the sausages and haloumi in a bowl and combine well. Roll into small patties about 2cm thick and set aside. 

Season the tomatoes with salt and pepper and drizzle with olive oil, then place cut side down on the grill along with the bacon and mushrooms. Fry everything until crispy, flipping over halfway through.

Add the patties to the flat grill plate and cook for 2-3 minutes on each side, until cooked through. Crack the eggs onto the flat plate as well and cook to your liking.

Warm the English muffins on the PowerGrill then serve the dish with the cooked tomatoes, bacon, patties, mushrooms and HP sauce on the eggs.
