Tuna Hommus Wrapped in Capsicum

Servings makes 8-10

Ingredients

4 jarred capsicum sides, cut into 3 cm strips

Chives, finely chopped to garnish 

Tuna hommus

1 x 150g can of tuna in spring water, drained

2 anchovies 

1 tsp capers 

1 tbsp hommus

Zest of 1 lemon

Salt and pepper

Method

In a small food processor, blend the tuna hommus ingredients together until a smooth paste forms.

Lay the strips of capsicum on a clean surface and add a teaspoon of the mixture to one side. Roll the capsicum over the tuna hommus and keep rolling to form a cylinder. Repeat with the remaining. Serve on a plate with a sprinkle of chives.
