Tuna and Cheese Triangle Melts

Servings makes 8 triangles

Ingredients

2 x 185g cans tuna in spring water, drained

8 slices of cheddar cheese

2 spring onions, finely chopped

1 celery stick, finely chopped

Juice of ½ lemon, or taste

¼ cup good quality whole egg mayonnaise

4 large tortillas, halved

Olive oil spray

Gherkins, to serve

Method

In a bowl, mix the tuna, spring onion, celery, lemon juice and mayonnaise. Season with cracked black pepper and salt to taste.

Warm the tortilla in the microwave for 30 seconds to soften. Take half a tortilla at a time (straight edge on left and rounded side on right), and place one slice of cheddar at the bottom, top with a tablespoon of the tuna mixture and then a second slice of cheese on top.

Fold the rounded edge over (about 1 cm in) and fold the filled tortilla into a triangle, tucking in the last edge to close. Continue with remaining tortillas and tuna filling to make 8 triangles.

In a pan or in a sandwich press, on medium heat, spray the tuna triangles with oil and toast on both sizes for 1 - 3 minutes until golden brown. Serve hot tuna melt triangles with sweet gherkins and extra lemon.
