Toasted Muesli

Ingredients

200g rolled oats
1 cup shredded coconut 
¾ cup flaked almonds
½ cup puffed rice 
½ cup pumpkin seeds 
Pinch salt 
½ tsp ground cardamom
1 tsp cinnamon
Zest 1 orange 
80g honey
80ml extra virgin olive oil (light)
90g dried fruit of your choice, chopped 

Method

Mix all dry ingredients, spices and orange zest, except for dried fruit.

Combine honey and light olive oil.

Preheat oven to 170°C. 

Bake in a preheated oven for 30 minutes, stirring regularly, or until golden. 

Stir through dried ingredients. Cool and store in an airtight container.
