Toasted Brioche with Poached Dried Fruits

Ingredients

1 cup water
3 oranges, juiced
1 cinnamon stick
2 cloves
2 ½ tbsp agave syrup (or honey or any sugar of your liking)
450g dried fruits (such as pears, apricots, prunes, apples)
 8 thick slices of brioche bread, toasted until golden brown.
1 ½ cups ricotta
¼ cup cream cheese
1 tsp agave or honey
Pinch cinnamon

Method

In a saucepan, combine water, juice, cinnamon stick, cloves, agave and fruits. Bring to the boil and turn down to a low heat and cook for 25 minutes. Cool slightly.

While the poached fruits are cooling, blend the ricotta, cream cheese, agave and cinnamon in a small food processor until smooth.

To serve, arrange two pieces of brioche on each plate. Spoon-over the poached fruits and the syrup, followed by a spoonful of the ricotta mixture.
