Thyme and Honey Pork Ribs

Ingredients

1kg pork baby back ribs

5 sprigs thyme, leaves picked plus extra to garnish

¼ cup honey, warmed

3 tbsp soy sauce

1 onion, sliced

1 cup chicken stock

Method

Cut the rib racks in half so they fit into the pressure cooker. Combine the honey and soy. Using your hands massage the marinade into the pork and place into the pressure cooker along with the onion, thyme and remaining marinade sauce. Pour over the stock and lock the lid. Cook for 30 minutes under pressure until tender.

Carefully remove ribs and line on a rack. Turn pressure cooker to sear function to reduce liquid to a glaze. Once sticky and thick, brush generously over the ribs.

*If you want your ribs to be extra sticky and glossy, place the ribs back into the pressure cooker and place the crisp lid on. Select grill function and cook for further 15 minutes.

Cut ribs into small 3-rib portions and pile onto a plate. Pour over the remaining glaze and garnish with extra thyme leave.
