Tandoori Sweet Potato Couscous Burgers

Ingredients

2 cups couscous

2 cups boiling water

2 cups sweet potato, peeled and grated

2 tbsp tandoori paste

½ cup mint, finely chopped

½ cup parsley, finely chopped

½ cup coriander, finely chopped

1 lemon, zested and juiced

2 tbsp thick yoghurt

1 egg

3 tbsp olive oil

8 little fancy burger buns

½ cup aioli

2 cup mixed salad leaves

2 tomatoes, sliced

4 pickles, sliced in halves

Salt & pepper

Method

Place couscous into a large bowl and cover with boiling water, put a lid on top and set aside for 8 to 10 minutes.

Put a pan on medium heat, add tandoori paste and cook for 2 minutes. Add sweet potato and cook for 8 to 10 minutes until the potato is cooked. Turn off the heat and add mint, parsley, coriander and lemon.

Allow potato mix to cool slightly, add to couscous and mix in yoghurt and egg. Combine together and season with salt and pepper. 

Roll into small patties, cover and refrigerate for at least 15 minutes. Heat a pan on medium heat and add a splash of oil and cook patties on each side for 3 minutes.

Cut buns in half, place a little aioli on the base, then add salad greens, tomato, pickles and finish with patties.

Serve and enjoy with family and friends!
