Sweet and Sour Prawns

Ingredients
1.2kg greens prawns, peeled and deveined
Vegetable oil, for deep-frying
White sesame seeds to garnish
Batter
¾ cup plain flour
1 tsp baking powder
¾ cup soda water
Sweet and sour sauce
1 tsp cornflour mixed with 2 tbsp of water
⅓ cup rice vinegar
⅓ cup honey
3 tbsp ketchup
1 tbsp soy sauce
Method
To make the sauce, first, combine the cornflour and the water to make a paste and set aside. Add all the remaining other ingredients to a medium-sized saucepan and bring to a boil. Whisk in the cornflour paste until thick and glossy.
For the batter, sift the flour, pinch of salt and baking powder into a large bowl. Whisk in the soda water until the batter is the consistency of thickened cream. You may need a little more or less water.
Heat the oil in a large saucepan or wok to 180°C. Dip the prawns into the batter and, in small batches, fry the prawns for 1 - 2 minutes or until crisp and golden. Drain on a paper towel. Repeat with the remaining prawns.
Toss the hot prawns through the sauce and serve garnished with sesame seeds.
