Steak with Dijon Sauce

Ingredients

2 tsp extra virgin olive oil 

2 x 180g fillets of beef

3 sprigs of thyme

50g butter 

3 French shallots, finely chopped

500ml thickened cream

2 tbsp Dijon mustard  

French fries to serve

Green salad, to serve on the side

Method

To make the mustard sauce, heat half the oil and 20g butter in a saucepan and add the shallots. Sauté to soften and cook until soft. Add the cream, mustard and a pinch of salt. Reduce the sauce by almost half or until thick enough to coat the back of a spoon. Use a stick blender to blend the sauce until smooth. Check seasoning. 

Heat a pan over a medium to high heat. Drizzle the rest of the oil over the steaks and season generously with salt. Cook the steaks in the pan for 3-4 minutes on each side, turning every 2 minutes. To finish the steaks, add the remaining butter and thyme and use a spoon to immerse the steak in foamy butter. Remove and rest steak and rest for 4-5 minutes. 

Generously spoon mustard sauce over steak and serve with fries and a simple green salad on the side.
