Spiced Apple and Rhubarb Compote

Ingredients

1 cup water
1 ½ cups sugar
2 bunches rhubarb
6 green apples, peeled and diced
2 star anise
2 cinnamon sticks
1 vanilla bean, halved and seeds scraped
1 orange, zested and juiced

Method

To make the syrup, in a large hot pan, add water, sugar, orange zest and juice, cinnamon sticks, star anise and vanilla bean, and stir a little.

Add the apple and rhubarb to the pan and cover to cook for 15-20 minutes. Take the lid off and stir and cook until it softens and reduces in size.
