Soy and Sesame Steamed Fish

Ingredients

2 x (120g) white fish fillets (such as trumpeter, snapper, barramundi)

1 tbsp chicken stock

1 tsp light soy sauce

a few drops of sesame oil

1 chilli, finely sliced

1 X 2cm ginger, julienned

2 spring onions, finely sliced

Beansprouts, to garnish

Coriander, to garnish

Method

Place a steamer basket on top of a pan of simmering water.

Arrange fish on a shallow plate that fits nicely into the steamer basket. Drizzle over stock, soy and sesame oil and chilli and ginger. Transfer to the steamer basket and close the lid. Steam for 2-3 minutes (timing will depend on how thick the fish is).

Carefully remove from the hot steamer basket and garnish with spring onions, bean sprouts and coriander.
