Smoked Mussel Ragu

1 tbsp extra virgin olive oil

1 onion, finely chopped

1 stick celery, finely chopped

¼ tsp chilli flakes

½ punnet cherry tomatoes, halved

1 tbsp tomato paste

½ cup of white wine

85g can smoked mussels in oil

Pinch curry powder

250g large pasta shells

3 sprigs of parsley, stalks and leaves finely chopped

Smoked Mussel Ragu


Bring a large pot of salted water to the boil.

Heat oil and a tablespoon of the oil from the can of mussels over medium heat. Add the onion, celery and garlic and cook for 5 minutes to soften with a little colour. Add the cherry tomatoes and pastes and cook for a minute before deglazing with wine. Boil for a minute then add the mussels and curry powder.

Add pasta to boiling water and cook until just al dente.

Add pasta to the mussel ragu along with some of the cooking water and parsley, toss to coat and serve.
