Smoked Cheddar Toast with Pickled Zucchini
Cook Time 1 hour (+ marinating time)

Ingredients
2 zucchini, finely sliced with peeler
1 small brown onion, finely sliced on a mandolin
1 tsp of sea salt flakes
1 cup of cider vinegar
½ cup of castor sugar
1 tsp mustard seeds
½ tsp chilli flakes
¼ tsp turmeric powder
4 thick slices of sourdough bread, lightly toasted
150g smoked cheddar, grated
Method
Place the zucchini and onion in a bowl.
Bring the vinegar, sugar, salt, mustard seeds, chilli and turmeric to the boil. Pour over the zucchini and coat completely. Cover and marinate for 2 hours, even better overnight.
Heat the grill element in the oven.
Sprinkle the cheese over the toast and grill until the cheese is bubbly and golden. Top with a big spoonful of the zucchini pickles.
