Smashed Mushroom Burger

Ingredients

40ml safflower oil or vegetable oil

4 portobello mushrooms

1 brown onion, sliced finely

4 slices of vegan melty cheese

2 white, soft, not crust burger buns

Pinch of salt

Tomato sauce

American mustard

Method

Smash the mushrooms with the butt of a pan to flatten.

In a pan or cast iron, add some oil and place on the mushrooms and add a weight to press and create colour. Cook for 5 minutes on high. Flip and cook for another 3 or so minutes without the weight.

Place the cheese on top of the mushrooms and add a touch of water to the pan along with a lid to steam and make the cheese melt. If possible, place the buns in once the cheese has melted to steam too. This will make them soft.

Stack the mushrooms by 2 and then place them on the bottom bun. Add the onions to the top of the mushrooms, add sauces and then place on the bun top. Eat.
