Slow cooked onion and smoked salmon spaghetti

Ingredients
3 tbs. olive oil
10g butter
2 anchovies, finely chopped
3 medium onions, finely sliced
4 sprigs of thyme, leaves picked
1 bay leaf
2 tbs. crème fraiche
½ cup freshly grated Parmesan
1 packet of spaghetti
8 slices of smoked salmon
Lemon, garnish
Method
Melt the butter with the oil and the anchovies in a large pan on low heat. Add the onions, bay leaf and thyme and season with salt and pepper. Cook on a low heat for another 45 minutes. Stir regularly until the onions are very soft and translucent.
Bring a large pot of salt water to the boil. Cook spaghetti for 7 minutes. Strain the pasta once cooked.
Remove the bay leaf from the cooked onions and stir in the crème fraiche over a medium heat. Once thickened slightly, turn the heat off and add the spaghetti and Parmesan and toss very well. Serve with a garnish of smoked salmon and wedge of lemon.
