Semolina Halva

Ingredients

1 tbsp ghee or butter
40 g (1½ oz/¼ cup) fine semolina
125 ml (4 fl oz/½ cup) milk
3 tsp sugar
75 ml (2½ fl oz/? cup) cream
2 tsp sugar
30 g (1 oz) blueberries
Asian or holy basil leaves

Method

Heat the ghee or butter in a saucepan and add the semolina, toast over medium heat for 3–5 minutes, or until golden brown, stirring constantly. Add the milk and 3 tablespoons of sugar, cover with a lid and cook over low heat for 2 minutes. The semolina will double in size and turn fluffy.

In a bowl, dissolve the remaining sugar in the cream using a spoon and set aside.

Serve the semolina halva on a plate, drizzle with cream, scatter over blueberries and garnish with basil.
