Scallops with Crispy Prosciutto and Sage

Ingredients
1 tsp extra virgin olive oil
12 scallops
4 slices of prosciutto, finely chopped
6 sage leaves, finely chopped
20g butter
Juice ½ a lemon
Pinch of salt
Method
Heat a pan over high heat. Add oil and prosciutto. Fry for a minute or until it starts to become crispy and golden. Add sage and toss then move to one side of the pan.
Add scallops and season with salt. Cook for 30 seconds - a minute then turn and add butter. Allow butter the foam up and then use a spoon to drizzle hot butter over the scallops. Now add lemon juice and remove off the heat.
Place the scallop on a plate or return to their shells. Top with crispy sage and prosciutto and drizzle over lemon butter.
