Scallops in Cream Sauce

Cook Time 15 minutes 

Servings 2 as a main, 4 as an entree

Ingredients

1 tsp extra virgin olive oil

10 scallops

80ml white wine

100ml cooking cream

1 knob of cold butter

Salt & pepper to taste

Chives, finely chopped for garnish

Method

Heat oil in a pan on high heat.

Sear the scallops for 30 seconds on each side, and season them with salt and pepper. Add a splash of white wine and remove the scallops from the pan.

Swirl the cream into the pan until it thickens, add salt and pepper, butter and whisk together. Remove the pan from heat and pour into serving bowls. Return the scallops into the bowls and garnish with chives.
