Sausages in Grilled Flat Bread

Ingredients
8 pork and fennel sausages or any of your choice
1 onion, sliced
1 red capsicum, cut into wedges
1 yellow capsicum, cut into wedges
Tomato sauce, relish or mayonnaise, to serve
Flatbreads
1½ cups plain flour
½ tsp baking powder
250g natural yoghurt
Good pinch of salt
Fine semolina, for dusting (alternatively just use more flour)
Extra virgin olive oil, for brushing
Method
Place the flour baking powder and salt into a bowl and mix. With your hands make a well in the centre and add the yoghurt. Little by little combine and knead for about 8 - 10 minutes or until soft dough forms.
Flour your board with semolina and cut the dough into 8 even pieces and roll into balls.
Roll out each ball into with rolling pin until it’s about 15 cm in diameter. Don’t worry about making it the perfect circle. Cover each flatbread with baking paper and repeat this process.
While rolling out the flatbread preheat the grill function in the air fryer. Toss sausages, onions and capsicums with a splash of olive oil. Arrange on the grill in the basket and cook until caramelised. Remove and keep warm.
While the grill is still hot, working with one flatbread at a time cook for 2 - 3 minutes. Remove and repeat. Serve sausages, onions and capsicum in flatbreads with your favourite sauce.
