Sardines with Mustard Cream Sauce

Ingredients

Olive oil, to brush
8 fresh sardines, scaled, gutted and cleaned and butterflied
250ml pouring cream
1 tbs. Dijon mustard
½ tbs. hot English mustard
Pinch salt and pepper
½ tsp. lemon juice
Steamed beans, to serve

Method

Season sardines with olive oil, salt and pepper.

To make the sauce, add the cream to a small saucepan and bring to the boil. Reduce the heat and reduce for 4-5 minutes until slightly thick. Now add the mustards and lightly season with salt and pepper. Add a squeeze of lemon to finish the sauce off. Keep in a warm spot.

Heat a BBQ or griddle pan until hot. Brush each sardine with olive oil and season with salt and pepper. Place on the grill skin side down and cook for 1 – 2 minutes before turning over and cooking for a further 1 – 2 minutes.

Serve with steamed green beans and a spoonful of the sauce.
