Sambal Twice Cooked Eggplant

2 eggplant

2 tsp sambal oelek

2 tsp marmalade

1 tsp minced ginger

1 tsp sesame oil

Sambal Twice Cooked Eggplant


Preheat the oven grill in the oven.

In a bowl mix the sambal oelek, marmalade, ginger and sesame oil.

Cut the eggplants in half. Place the eggplant into a steamer basket over a pot of simmering water and steam for 10 minutes until soft. Carefully remove and place on a baking tray lined with foil.

Spoon over sambal mixture and place in the oven, under the grill for 5-8 minutes until caramelised.
