Salmon with Vanilla and Citrus Dressing

Ingredients

½ Zest and segments of ½ orange 

Zest of 1 lemon

Zest of 1 lime

2 x salmon fillets, skin on 

1 tsp vanilla bean paste

3 tbsp extra virgin olive oil

Pinch of salt and pepper 

Celeriac remoulade or any salad of your choice

Method

Pan fry the salmon for 2 minutes on the skin side and a minute on the flesh side.

Place the citrus zest and orange segments into a bowl. Add the vanilla, salt and pepper and olive oil. Stir to combine.

Serve the salmon with the salad and drizzle over the dressing.
