Roasted Red Cabbage with Bacon and Caraway

Cook Time 40 minutes

Servings 4 as a side

Ingredients

1 slice of middle bacon, fat trimmed
1½ tbsp Extra Virgin Olive Oil
½ red cabbage (about 700g), cut into 6 wedges
30g butter, diced
1 tsp caraway seeds pinch of chilli flakes
Salt flakes and freshly ground black pepper

Method

Preheat the oven to 180°C.

Finely chop the bacon so it resembles mince.

Line a baking tray with baking paper. Drizzle a little oil on the tray and then add the cabbage wedges in a single layer. Drizzle over the remaining oil and dot with the butter. Sprinkle over the caraway seeds, chilli flakes, a pinch of salt and pepper and the bacon. Roast for 25 minutes until the cabbage is tender and slightly crisp on the outer leaves.
