Roasted Coconut and Autumn Fruit Salad

Servings 2-4

Ingredients

100g coconut slivers
½ a cup of passion fruit pulp
½ a cup of pears
½ a cup of kiwi fruit
1 orange cut into segments

Fruit salad dressing
2 ripe bananas
¼ cup of mint
½ a lemon juice
½ a lime juice

Method

Pre-heat the oven to 180 degrees and place the coconut in a baking tray and bake for 5-10 minute or until golden brown.

In a food processor place the banana, lemon juice, lime juice and mint and process until smooth.

In a bowl gently mix through the passion fruit, pears, kiwi fruit and orange segments.  Place the fruit mixture into individual bowls and then pour over the banana dressing. Sprinkle coconut to finish and serve in decorative glasses.
