Rainbow Buttermilk Pancakes

Ingredients

2 cups plain flour
2 tsp. baking powder
Pinch salt
1 tbs. sugar
25g butter, melted
1 egg
2 cups buttermilk
2 drops each of your choice of food colourings (blue, red, purple, green, yellow)
Oil or butter for the pan
Maple syrup, to serve

Method

In a large bowl add the dry ingredients.  Make a well in the centre and add the butter, egg and buttermilk. With a whisk combine together until a smooth batter is formed.

Divide the batter into 4 bowls and add the colouring to each bowl and mix.

Heat a large non-stick frying pan over a moderate heat, drizzle a little oil or butter in the pan and add ½ a ladleful of batter. Once small bubbles form and burst the pancakes are ready to turn. Cook for a further 2 minutes. Repeat the process until all the pancakes are cooked. Serve with maple syrup.
